Chocolate Chia Protein Pudding

Chia seeds are some of the coolest and weirdest lil “superfoods”. Most people know of them because they grow into these cool plants:

But they also have tons of health benefits! These tiny seeds pack tons of fiber, protein, omega-3 fatty acids (super important for brain functioning), and calcium.

On their own, chia seeds taste very bland (who would eat them by themselves lol) and I am a firm believer in the statement, “you CAN have your cake and eat it too” so I made it my mission to find a way to make this nutrient-packed food taste delicious. Cue experiment time in the kitchen!!

I have a HUGE sweet tooth so I naturally wanted to create something with chocolate and I’ve also been tracking my macros (will do a blog post on that later!) and have been looking for higher protein foods. By combining these two criteria, chocolate chia protein pudding was born.

Ingredients:

  • 1 cup unsweetened almond milk (more or less depending on how thicc you want your pudding)
  • 1 cup chocolate protein powder
  • 1/4 cup chia seedsIMG_5544

Instructions:

Measure out the ingredients and combine in a cup/bowl/mason jar/anything and leave the mixture in the refrigerator for at least 2 hours. IMG_5547

When you’re ready to eat, take out this *beautiful* creation and enjoy as is or add your favorite toppings. I put banana and some almond butter on mine and it was AH-mazing.

Some other options for toppings are whipped cream :P, raspberries and chocolate sauce, coconut shavings, or anything else you can think of.
